How to Cook a Proper Steak

I used to be guilty of over cooking steak. Not because I am afraid of a little bloody flesh, but because I never learned the proper way to cook a steak. I'll admit, growing up, I was taught to cook a steak until it was damn near charred... but I always felt like the meat lacked flavor and was very tough. I found myself slathering meat unnecessarily with sauces to get the taste I wanted. When dining out, I always ordered my meat medium-rare, but achieving it at home was nearly impossible... then my partner explained what I was doing wrong. I consistently choice the wrong cuts of meat, I used too many spices and I was cooking my steaks too long.
I found this handy guide online that explains perfectly how to get restaurant quality steak at home. Choose cuts with a little more fat than you would normally consider, and whenever possible, purchase bone-in steaks, (my experience is steaks with the bone and a little more fat are more tender, and have more flavor.) Generally speaking, all you need is a little sea salt and pepper to bring out the optimal flavor in the meat. Watch the clock for optimal cooking time, and that's it!
